“Food as Medicine” is a term which was originally coined by Hippocrates, the father of Western Medicine. It was his belief that eating wholesome food is the basis of good health. Hippocrates said this almost 2,500 years ago. “Leave your drugs in the chemist’s pot if you can heal the patient with food”.
I’m not suggesting to replace medication entirely. During this last summer, I cut open my leg while moving a railroad tie in the garden. It was a freak accident. I pivoted the heavy tie and let it drop into place. But I hadn’t seen it had a giant rusty spike sticking out of the end until it drove through my shin. I was in crazy trouble as I held my leg together. I was able to get a call out to my husband, who was an ambulance driver in the military. He tore through traffic to get me and take me to the emergency room. I received 35 stitches from an ex-military nurse practioner who loved the challenge of trying to pull my leg back together. He was an angel. This was not a job for juicing or a blender drink. But once I got back home, I put my healing in the hands of God and top-notch superfoods to provide the power to knit my leg back together. I juiced, blended and ate unpasteurized superfoods to boost my immune system. In time, as the body is Divinely designed to do, my leg healed.
I know, at first, it is very hard to put so much trust in using live plant-based foods as healing tools. It is not at all what we have been taught as a culture, especially with illnesses like cancer and diabetes, or even auto-immune diseases. Diseases we have been told for generations that can only be managed by western medical professionals. Even if you have transitioned to shopping at Whole Foods, we are still led to believe that, for all that ails us, there must be a product for it in the supplement department, not the vegetable department.
THE FOOD AS MEDICINE MOVEMENT
Yet there is presently a broad movement happening in nutritional science. As research equipment and the power of microscopes have improved, nutritional scientists are now validating the therapeutic power of plant-based foods as healing vehicles. Understanding how plant-based foods work in tandem with the body is truly fascinating.
Some examples of evidence based discoveries are:
> Carrots: Contain beta-carotene, an antioxidant scientists believe can protect cell membranes from toxic damage and slow the growth of cancer cells. To load up on beta-carotene, we love fresh juicing.
> Fully Ripe Bananas (with the brown spots): Produce a substance called ‘tumor necrosis factor’, which can eliminate abnormal cells. I know it’s hard to find bananas fully ripe, but you can bring them home and wait couple of day for them to turn. Then add one to your smoothie.
> Beets: The red color in raw beets comes from compounds called betalains, found to inhibit carcinogen formation. We love a slice or two in our juice creations.
> Garlic: Studies have found that compounds in fresh garlic help with DNA repair, slow the growth of cancer cells and decrease inflammation. How do we use garlic? We put raw garlic in everything.
> Nuts: A new study from Yale Cancer Center shows colon cancer survivors who regularly eat raw nuts have a significantly lower risk of cancer recurrence by 46%. We are big fans or making raw plant-based cashew cheese.
> Unpasteurized Miso: Studies have found that women with the most isoflavones, a class of phytoestrogens, in their diet have the lowest risk of breast cancer, especially postmenopausal women. That is why unpasteurized miso paste is used in so many of our Food As Medicine recipes.
> Greens: Possess a chemical structure that allow them to bind to harmful chemicals and literally guide them out of the body. That is a good reason to eat salads made of assorted baby greens like kale, chard and romaine lettuce.
THE REAL MAGIC
Plant-based whole foods contain a number of substances that work synergistically. Meaning that in the Food As Medicine Healing System, when we mix some of the above foods together, we create a powerhouse of healing potential. Mix carrots and beets together in the juicer and you have a super potent cocktail. Mix raw cashews with garlic and unpasteurized miso and you have a plant-based cheese that is not only delicious but an efficient healing food. Remove processed chemical filled foods that are causing inflammation and harm and you let the miracles begin.
