Here’s what I learned that I would like to share with you: It is estimated that one in three adults will contract cancer in their life time. Cancer is a complex disease with over 100 different types. Each type varies. But common risk factors are linked with poor diet, physical inactivity and carrying around too much weight.
According to Dr. Neal Barnard, head of the ‘Cancer Project’, the first inkling that cancer had anything to do with diet and weight came from studies of Japanese women who are less likely to develop cancer compared to American women. Experts believe that one of the reasons is because they don’t carry the extra weight that American women are presently struggling with. Fat cells secrete large amounts of estrogen into the bloodstream which acts as a growth agent for cancer cells. Estrogen has a love affair with cancer cells. It cruises around the blood stream looking for just one lonely cancer cell. Snatch! Estrogen can grab on and make the cancer cell grow, acting like fertilizer on a weed.
In a healthy, lean green body, the liver is filtering our blood every minute of every day and looking for things that don’t belong there. If it finds extra estrogen, it pulls it out, sends it down through the bile duct and into the intestinal tract. There, fiber literally latches onto the estrogen and sweeps it out of the body during our daily bowel movements (this has to be Raw food fiber; cooked food fiber is too soggy and loses it magnetic properties).
This is one of Nature’s genius ways of keeping us healthy. If we eat plenty of roughage-rich fruits, vegetables, nuts and grains, and keep our elimination system working smoothly, we can maintain our own natural weight and our body can do it’s job. In this way we have a great chance of remaining disease free.
I didn’t always have a gentle relationship with food. Making the leap from food obsessive to food creator happened by accident. When I began my journey I was very sick, dangerously out of balance, more like dangling off a cliff. It took a cancer scare to turn my lifestyle around. I had to clean up big time, get educated, detox every corner of my life. I would need to become best buds with food after years of shame and guilt. I would need foods that allowed that journey to take place. Foods that transformed both my body and my soul. And I would need to make friends with my elimination system, a relationship I had ignored most of my adult life. I would need to embrace self-care. As well, deep journaling helped me drop some long overdue emotional baggage. In short, I learned a whole new way to live life…
My quest to get well led me to new lands I didn’t know existed. It granted me grace and gifts I hadn’t expected. This was over fourteen years ago. I can now feel good about what I do as an educator because if it worked for me, it can work for you, and it can work for your family, friends and clients.
