We naturally seek out healthy alternatives to breads that are a bit sweet with a whole lotta nurturing. Many raw breads contain flax, giving them a strong flavor, making them a touch bitter for our taste buds first thing in the morning.
I’d like to give you our Raw Date Nut Bread Recipe. It’s so perfect that we have been eating it now for five years first thing in the morning.
It’s made from buckwheat groats. Don’t be fooled by the name. Buckwheat groats are a seed, an edible flower seed, not a grain. This gentle tasting food contains no gluten so it can be eaten by people with celiacs disease. High in fiber, it speeds up transit time, unlike the gluten filled wheat bagels, breads and buns that add to our constipation problems. It contains all eight amino acids, making it high in plant based proteins. It’s probably the most important transformative food we have added to our diets.
Raw Date Nut Bread Recipe
- 1 cup buckwheat groats
- ½ cup macadamia nuts
- ½ cup organic raisins
- 10 dates
- ¼ cup raw honey
- ¼ cup liquid
Soak buckwheat groats, macadamia nuts, raisins and dates in filtered water for 8 hours or over night. Drain before use. Feed your soaked foods through an Omega juicer with the blank on. It will come out as a lovely dough. Stir in the honey and liquid until it is smooth and creamy. Add a bit more water as needed. Using a large spoon, set dollops of dough on the dehydrator sheet. Use a spatula to smooth them out into 1/8th inch thick pancake size breads. Dehydrate in the Excalibur at 115 degrees for 7-8 hours.
Tip: I soak the ingredients in the morning, make the dough in the evening, dehydrate that night and voila! We have them ready next morning to greet us. This recipe make about 12 breads.
