Rejuvelac is a fermented drink made from sprouting grains, such as wheat, rye, quinoa, barley, millet, buckwheat or others. It tastes a bit like fizzy lemonade. It is used to replenish intestinal microflora and to help rebuild digestion.
My mentor, the pioneer Raw Food educator Dr. Ann Wigmore, popularized making your own Rejuvelac at home. She was farm girl from Lithuania. It was important to her that the raw cleansing diet remain affordable so that we all can benefit from the potential miracles. Dr. Ann knew this first hand, having cured her own cancer with the Raw Food diet.
Making Rejuvelac at home is simple, cheap and assures you that you are ingesting live culture. Over the counter supplements are not necessarily the same species of bacteria that naturally live in your intestines or they may have died in transport, making the product useless. Also probiotics added to food are also often non-native to the vast microflora ecosystem that makes up your delicate digestive tract. With Rejuvelac you are sure you are getting the real deal, probiotics including lactobacilli and aspergillus oryzae.
My favorite is grain for Rejuvelac is Organic White Pastry Wheat because it is so easy to sprout.
Rejuvelac is Organic White Pastry Wheat Recipe
- Soak ½ cup of white pastry wheat in a quart Ball jar filled with filtered water over night.
- In the morning, drain the wheat and set the jar on its side so that the wheat can begin the sprouting process. In the evening rinse the wheat, drain and set on its side again. Repeat the process for two more days. By the third day the little ‘tail’ buds of sprouted wheat will have formed on your wheat berries. You’re sprouted and ready to go.
- Rinse the wheat one more time. Then fill your Ball jar up with filtered water and let it set for 24 hours. I like to set my tonic on the counter top where I can be reminded to take care of it. I am an out of sight/out of mind kinda gal. Anywhere is fine as long as it’s not in direct sunlight.
- That’s it! The magic of fermentation has taken place while you were busy with other things. It’s ready to drink. Drink a 6 oz glass a few times throughout the day. I like mine with a spritz of lemon. You can also use Rejuvelac in raw salad dressings and raw soups for extra probiotics.
Store any unused Rejuvelac in the fridge and drink over the next couple of days.
