Years ago when we lived on a rural farm in Tennessee, we milked a high fat Jersey cow and I made raw unpasteurized butter weekly. We didn’t have refrigeration, so we would keep it cool by placing it in a jar and dropping it in the water of the spring head, where the waters kept a constant temperature of 55 degrees. The spring head was down hill from the house, so when you wanted butter, you would need to trek down and get it. It was a lot of work for butter, but it was the pioneering ‘Back to the Land” period, and back then who wouldn’t walk a mile for sweet butter?
